    I considered writing a defensive intro to this image-- one that acknowledged cheese soup as outmoded (sort of 80's, no?) and potentially unrefined. One that noted my use of a chinois in making this dish and attested to its wonderfully complex flavor-- sharp yet balanced and laced with hints of crisp sauvignon blanc. Just when I think my readers are open-minded and supportive, out you come with the hollandaise...

  3. If this soup is outmoded and reminiscent of the 80s, then so am I. I love that shit and have it for lunch all the time. AND I promise I have no hint of sauvignon blanc in my bowl from the lunch wagon...
