Return of the Return of the Regular


I can't explain the hiatus we've taken from the regular, but the hiatus has ended.

  1. What IS the significance of cake flour? You mention it in earlier notes, though I don't see additional explanation and am curious.

  2. Sorry-- didn't mean to be difficult or elliptical there. Cake flour has less gluten than regular flour. That makes it lighter. I believe that, before making that particular dinner, I'd only used cake flour in recipes that called for it. By using it in my cornbread (which I bake all the time with regular flour), I finally felt the difference. It's indeed lighter.
