Sorry-- didn't mean to be difficult or elliptical there. Cake flour has less gluten than regular flour. That makes it lighter. I believe that, before making that particular dinner, I'd only used cake flour in recipes that called for it. By using it in my cornbread (which I bake all the time with regular flour), I finally felt the difference. It's indeed lighter.
What IS the significance of cake flour? You mention it in earlier notes, though I don't see additional explanation and am curious.
