I was so thrilled with this dish, which
I know isn't for everyone: pasta, olive oil,
golden beets, beet greens, pine nuts,
raisins, garlic, mint, and Saxon Creamery's Big Eds.

oh, I know some of my readers don't like raisins or don't like raisins except by themselves or aren't wild about beets. And some people might find the mint to be a weird component. I can't stop thinking about this pasta, though. I'd love to serve it while entertaining, but all of the above make me very unwilling to do so. xo to all-- even the raisin haters.

Much love to all from MC as well. But here's the deal: interesting combinations are awesome, raisins rock and beets cant be beat! I love them all and I hope you'll offer this to Boom and I when we visit.
