Galettes


Apricots, blueberries, and not quite enough sugar.

Blue plums (still tart but with a pleasant sweetness).


Red plums.

I used Deborah Madison's recipes in _Vegetarian Cooking for Everyone_ for reference. epicurious.com has lots of recipes, though. I always sweeten the dough, as the fruit invariably ends up being tarter than expected. You can make galettes much prettier than mine-- taking care to fold them attractively, etc. These were all about a quick rustic desert to celebrate the harvest of late summer fruits here.
