What kind of fish is this?
This is rainbow trout.
lightly floured and pan fried?
Breaded with a medium grid cornmeal and pan-fried in lightly browned butter (which I likely cut with a little vegetable oil after it began to brown).
oops: medium grind, not medium grid. See 12.05.09 post for medium grid.
