I'm so glad you posted this. I was having trouble coming up with a visual for what you described. Looks SO good. Is this a recipe you would be willing to share?

The dumplings are super easy. The whole she-bang is adapted from the epicurious.com recipe for Chicken with Vegetables and Parsley Dumplings. I'm happy to supply pointers on how to vegetarianize the dish-- I used mushrooms in lieu of chicken and didn't follow the recipe closely. I'm sure the chicken dish could be rendered simpler as well.

The peas and carrots remind me of another post of yours with peas in a delicious sauce, both of which make me crave Chicken a la King, although I'm a vegetarian. Not that your dishes directly invoke the grade school lunchroom or anything. Peas in sauce just remind me. Lately I've been wanting In-and-Out Burger, too.

Barefoot Contessa taught me, among other things, to embrace comfort foods, to appreciate the sophistication of the emotional nourishment that food can supply. I'm sure you could make Mushrooms a la King. Or maybe savoring the memory-based desire for C a l K provides its own satisfying emotional nourishment.

Not satisfying enough. I really want to eat the Chicken a la King, on a compartmentalized lunch tray, if possible.

Vegetarian adaptation: yes, please!
